Jimmy Luscombe, founder and driving force behind Highlands Natural, brings a fresh, systems-based approach to regenerative agriculture shaped by his earlier career as a builder. With a deep appreciation for strong foundational structures, function, and long-term durability, Jimmy has applied the same philosophies he once used in construction to designing resilient, high-performing farming systems built from the soil up.
His transition into farming sparked a relentless pursuit of knowledge. Jimmy has travelled extensively across Australia, completing courses and mentorships learning directly from world leading educators in natural agronomy, holistic management, and regenerative grazing practices.
This hands-on education laid the foundation for a farming philosophy centred on soil health, ecosystem function, and producing truly nutrient-dense food.
At the core of his operation is a passion for high-intensity, time-controlled grazing. Jimmy has transformed his farm into a network of tightly managed 1-hectare cells using an innovative automatic time-release paddock rotation system. This allows cattle to move frequently onto fresh pasture, mimicking natural herd behaviour while giving grasses optimal recovery time, resulting in dense, diverse, and highly productive swards.
The outcome is what Jimmy describes as the ultimate “grassland paradise”, a fully chemical-free system where cattle are finished exclusively on fresh, nutrient-rich pasture every single day. By steering away from conventional grain finishing and feedlots, he has instead created a natural alternative: “Nature’s feedlot,” designed to maximise animal health & performance, land regeneration, and eating quality.
The result is exceptional grass-finished beef, rich in flavour, deeply nourishing, and a true reflection of the land it comes from.

Matt Mitchell is the Farming division manager for Highlands Natural’s grass-fed regenerative beef operation, bringing over 30 years and 2 generations of hands-on experience working the land across the Southern Highlands. What started as an idea with Jimmy over a
coffee turned into developing a regenerative farming system that now produces some of the best grass-fed beef in the country. After decades as a rural contractor, Matt developed an unmatched understanding of soil, pasture, and the natural systems that underpin truly healthy farming.
Matt is deeply committed to chemical-free regenerative agriculture, focused on building soil health from the ground up. His humble approach centres on restoring mineral balance, improving soil biology, and growing resilient, nutrient-dense pastures without the use of synthetic inputs. It’s a system that prioritises long-term land health over short-term gain, delivering stronger ecosystems and better quality food.
Widely regarded as one of the region’s leading pasture managers, Matt has an intuitive ability to observe and
read the land - knowing what to give the soil when it is required, when to graze
and rest, and how to maximise diversity and recovery in every paddock. Quite
simply, few people know how to grow grass naturally like Matt, his philosophy
of being grass farmers before cattle farmers results in the product we stand by proudly.
Matt has a great passion working closely with other farmers across the region as a regenerative soil health and pasture management consultant, helping transition operations away from chemical based practices toward naturally sustainable, more profitable systems.
Three years ago, Matt made the call to sell off his contracting machinery and wind down his contracting business to focus entirely on building Highlands Natural’s regenerative beef project, doubling down on his belief that farming can, and should, work in harmony with nature.
The result is a farming system driven by deep knowledge, practical experience, and an unwavering commitment to doing things the right way, producing nutrient-dense beef while regenerating the land it comes from.

At Laurel View Farm, legendary Robertson farmer John Mauger is quietly redefining what it means to farm with purpose.
Tucked into rolling pasture and managed with a deep respect for the land, John’s approach is grounded in regenerative agriculture- a system that prioritises soil health, biodiversity and animal wellbeing above all else.
For John, farming isn’t about extraction, it’s about restoration. Every decision he makes is geared toward leaving the land better than he found it. John’s approach to farming is an inspiration and leads by example to all farmers. As someone who has been farming his whole life, you could excuse John as a farmer set in his ways who has seen and done it all, yet he is still constantly searching and trying new methods to improve his farm to this day, leaving ego aside and mother nature first.
His cattle and sheep are raised the way nature intended - on diverse pasture, free to roam, graze, and express their natural behaviours. His intensive rotational grazing methods allow the land to rest and recover and the root zones to establish properly in his pastures. This results in animals that are healthier, less stressed, and ultimately produce more nutrient-dense meat. No shortcuts, no unnecessary inputs, just clean and honest food.
John’s philosophy is simple, if you look after the land and the animals, they’ll look after you. Healthy land, well-treated animals, and time-honoured methods produce better meat - full stop. It’s a slower way of farming, but one that delivers on flavour, nutrition, and integrity. It’s a long-term view in a world that often rewards short-term thinking, but it’s one he believes is essential for the future of food.

DAVID REFALO
REFALO CERTIFIED FREE RANGE PASTURED PORK, Canowindra, NSW
At Refalo Free Range Pork, David Refalo has spent over two decades refining a system that puts animal welfare, land stewardship, and pork quality at the centre of everything. Raised entirely outdoors on the rolling country of Canowindra, his pigs live as they should - free to roam, forage, and express their natural behaviours from birth through to finish.
A cornerstone of the Refalo system is carefully managed rotational grazing. Pigs are moved through paddocks on a structured cycle allowing pastures time to recover, maintain ground cover, and build soil structure. Alongside this, diverse cover crops including brassicas, barley, oats, sorghum and millet are planted specifically for the pigs to graze, creating a dynamic, nutrient-rich environment that supports both animal nutrition and regenerative land management.
Innovation plays a key role on the farm. Refalo has developed custom-built, open-air shelters that can be moved across paddocks, providing protection from the elements while maintaining a true outdoor system. At Enviroganic Farm in the hilltops of southern New South Wales, Sonya and Angus Dowling have been pioneers of certified organic poultry farming since 1999, setting the benchmark for what true pasture-raised chicken should look like.
Under Sonya and Angus’ stewardship, the farm operates on a holistic, closed-loop system designed to prioritise animal welfare, soil health, and long-term sustainability.
